1st Course

Drink: Rosetta
Eat: Texas toast, with goat cheese mousse and wine and shallot fig purée
 

2nd Course

Drink: Lovey, Dark and Deep
Eat: Carrots, roasted on coffee beans and Tokyo turnips, braised in honey
 

3rd Course

Drink: Dopplebock
Eat: Pork cheek confit, served with celery root purée and pickled green apple and garnished with natural pork jus
 

4th Course:

Drink: Great Divide
Eat: Mango—peeled, puréed and frozen—with coconut and vanilla panna cotta, garnished with Thai basil
